Butterfly Pea Tea (also known as butterfly flower tea) is made from the petals of the plant of the same name. The Butterfly Pea plant is native to Africa and Southeast Asia. The tea is naturally blue in color and is made from individually, hand-picked Butterfly Pea flowers, also known as Asian Pigeonwing. These are collected in bloom during the early morning hours and immediately dried in the sun. Butterfly Pea Tea is traditionally served with honey and lemon over ice. The tea turns a deep cobalt blue when water is added. Adding a few squirts of lemon turns the liquid purple. The tea changes color depending on what it is mixed with!
